What is the number one thing that most people in college forget? An assignment that was due? Sure. Their room key? Definitely. But the main thing that college students forget about is eating properly. Lots of students typically skip meals; I definitely have skipped a breakfast a few times or another.
The main reasons are usually due to lack of time, options or resources. Personally I can attest to the fact that not having a kitchen due to being in the dorms is quite a challenge at times. Some days I have the urge to want to make something other than noodles or a hot pocket. Granted going to the cafe is also an option, but most people (myself included) do not want to take the walk. Let's think about it though, not having a kitchen doesn't have to be a bad thing. There are plenty of recipes that can be made with a microwave and some simple ingredients.
But never fear, I'm here to show everyone a thing or two about some quick meals to be made in a microwave, starting with breakfast...
Ingredients
2 oz. of diced meat of your choice
1/2 cup of shredded sharp cheddar
1/2 tsp seasoning salt (or seasons of your choice)
2 tsp butter
8 eggs
(**1/2 cup diced peppers and 1/4 diced onions optional**)
4 storage containers (or mason jars)
Instructions
*this recipe is for a 4 day meal prep*
- Split the meat, cheese, onions and peppers (if you desire) evenly into the four containers.
- Seal the containers and store them for 4-5 days.
- When ready to prepare, place the ingredients from your pre-made container into a microwave safe container, add two eggs and stir. (*ceramic mugs are suggested for an evenly cooked egg scramble*)
- Place a paper towel over the top of the mug or microwavable container (to prevent splatter) and microwave for 30 seconds. Stir the contents and microwave for another 15 seconds. Stir again and continue to microwave for 15 second intervals, stirring after each, until the eggs are firm but still moist.
- Enjoy!
This recipe is a great for those days that you have an 8 am class and you're rushing. Prepping food the night or a few days before can be very effective and saves time, while ensuring you still eat a healthy breakfast.
